04 - 2 ounces shredded mozzarella cheese
05 - 1 ounce grated Parmesan cheese

11 - 8 slices bacon

# Directions:

01 - Preheat oven to 400°F and line a baking sheet with parchment paper.
02 - Wash and dry zucchini thoroughly. Slice each zucchini lengthwise and use a spoon to scoop out the center, creating boat-shaped vessels. Brush the cut sides with olive oil and season lightly with salt and pepper.
03 - In a mixing bowl, combine softened cream cheese, shredded mozzarella, grated Parmesan, fresh parsley, fresh chives, dried Italian herbs, minced garlic, and a pinch of salt and pepper. Mix until smooth and evenly combined.
04 - Fill each zucchini boat with the cheese mixture, spreading evenly to distribute the filling throughout.
05 - Carefully wrap each stuffed zucchini half with 1 to 2 slices of bacon, tucking the ends underneath to secure.
06 - Arrange the prepared boats on the baking sheet with seam side down.
07 - Bake for 25 to 30 minutes, or until the bacon is crisp and the zucchini is tender when pierced with a fork.
08 - Allow to cool slightly before serving to allow flavors to set.
